Last week I found myself with a bunch of parsley I didn't know what to do with, so I started poking around on the internets and found this recipe for a Middle Eastern bean salad called balela.
Um. Hi, I'm Stacy, and I think I'm addicted to this stuff. I ate it all week and today I made another big tub of it for this week. It's delicious. It's nutritious. It's easy. It's inexpensive. It's my new side dish of choice for pretty much any meal here at Boogaloo Acres. Also my snack of choice. I haven't tried it for breakfast yet, but it's probably only a matter of time.
By the way, I followed the link to this recipe from a blog I discovered called Cheap Healthy Good, which is now totally in my Google Reader. CHG has a long list of things you can make when you have fresh herbs leftover from some dish that only called for a small fraction of the bunch. This way, you don't waste any of that herbal deliciousness, and as CHG says, you can "stop blowing $1.79 every time [you] need a teaspoon of dill."
I imagine this list would also come in handy if, unlike me, you have a green thumb and a bumper crop of fresh herbs in your garden.
